Orange Beef

Ingredients

  • 1 flank steak (about 1.5 pounds)
  • 2 tsp grated orange zest
  • 1/2 cup juice of orange
  • 1/4 cup packed brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tsp Asian chili-garlic sauce
  • 2 tsp grated fresh ginger
  • 2 tsp cornstarch
  • 4 tsp vegetable oil
  • 2 scallions, sliced thin
Instructions

  1. Cut flank stead lengthwise into 3 long strips, then cut each strip crosswise against grain into thin slices. 
  2. Whisk orange zest, orange juice, sugar, vinegar, soy sauce, chili-garlic sauce, ginger, and cornstarch in a bowl.
  3. Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until just smoking.  Cook half of steak until browned, about 1 minute per side.  Transfer to bowl and repeat with remaining oil and steak.
  4. Add orange mixture to empty skillet.  Cook over medium heat, scraping any browned bits, until thickened, 2-3 minutes.  Add steak, along with any accumulated juices, and toss to coat.  Sprinkle with scallions.
*Gluten free if using a GF soy sauce.
