Granny Smith and Jalapeno Salsa

Ingredients
  • Small handful of parsley leaves (preferably flat leafed, but any kind will do)
  • 1/2 - 1 jalapeno sliced into the thinnest slices you can.  Do not cut the pepper in half prior to chopping it, you want the slices to be round.  You can clean the seeds out after you cut them.
  • Pinch of salt and pepper
  • a little olive oil, enough to lightly coat the parsley and peppers.
  • 1/2 granny smith apple, jullienne cut (looks like matchsticks) - prepare apple right before serving
  • Lime juice
Instructions
  1. Mix all the ingredients except the apples and lime in a bowl.  Try to meld the flavors together a little bit.
  2. Just before serving, cut the apples and mix into the pepper/parsley mixture.  Squeeze enough lime juice over the whole thing so the apples won't brown
  3. Serve on top of the Carne Asada tacos
