Simple Tacos


Sometimes it is really nice to have some simple tacos for dinner. But just because a meal is simple does not mean it has to lack flavor. These hamburger tacos are quick and delicious, and trust me when I say that I will never go back to a packet of taco seasoning and ground beef.

Simple Tacos
2 tablespoons vegetable oil
1 medium onion, diced
1 lb ground beef
1 (10 oz) can Mexican style tomatoes with green chiles, drained
1 (15 oz) can black beans, drained
2 teaspoons chili powder
2 cloves garlic, minced
corn tortillas

  1. In a large sauce pan, heat oil over medium-high heat. Add onions and cook until soft, about 5 minutes.
  2. Add meat and seasonings and cook until meat is cooked through. Then add beans and tomatoes and cook until heated.
  3. Serve over heated corn tortillas and toppings of your choice.

  1. Looks delicious! I've never mixed in the beans and tomatoes like that before but it's a great idea and I'll have to try it!
