Happy Halloween!


And I'm back.
Just in time for Halloween too.

Moving across the country is a lot more work than I ever expected. Well, moving itself was easy since a moving company came and packed everything up, shipped it out, and unloaded it. The difficult part came when we had to wait 2 weeks to move into our house (although we had a lot of fun staying with some friends), cleaning, unpacking, organizing, buying furniture (it's amazing how little furniture you have when living in student housing), and getting situated. But, life is finally calming down and we are loving our new house.

With Halloween just around the corner it is time for some creepy but yummy treats! I was thinking of what would make a good Halloween cupcake that would be easy but fun and I thought back on a treat I loved as a kid. Do you remember Mud in a Cup, a mixture of pudding and Oreo's with gummy worms? Those were so cool. I mean, when else are you allowed to eat something you're not supposed to, like dirt and worms? So, chocolate cupcakes with a chocolate filling, frosting with Oreo's, and gummy worms are definitely a must for me this year. I was very happy with how they turned out; quick and easy but also cute.

Cupcakes (for 24 cupcakes)
2 pkg Hershey's Chocolate Premium Cupcake Mixes
Ingredients for cupcakes

  1. Follow instructions for the cupcakes.
  2. Allow to completely cool before frosting.


Frosting (frosting for 24 cupcakes)
1 pkg cream cheese, room temperature
1/2 cup butter, room temperature
16 oz powdered sugar
2 Tablespoons cocoa powder
1-3 Tablespoons milk
1 pkg Oreo cookies (single stuffed)
1 large zip lock bag
Gummy worms and spider rings

  1. Beat cream cheese and butter together. With the mixer on medium-low, slowly add the powdered sugar and mix until combined. Mix in cocoa powder. Stir in 1-3 tablespoons of milk for a softer consistency. 
  2. In a zip lock bag, put all the Oreo's in and crush until they are crumbs. Stir the Oreo crumbs into the frosting.
  3. Put frosting on cooled cupcakes and top with gummy worms and spider rings.
