Refried Black Beans
Ingredients:
- 1 tablespoon extra-virgin olive oil
- 4 scallions, thinly sliced
- 4 garlic cloves, minced
- 2 teaspoons ground cumin
- 1/8 teaspoon cayenne
- pinch of salt and pepper
- 2 (15 oz) cans black beans, drained
- 1 (15 oz) can diced tomatoes, drained
Instructions:
- In medium saucepan, heat oil over medium heat. Add scallions, celery, garlic, cumin, cayenne, and salt and pepper. Cook until vegetables soften
- Add black beans and tomatoes, cook for 5-10 minutes.
- Transfer to a blender or food processor and blend until smooth or to your preference.
* If needed, add some water or reserved liquid from cans to thin beans
