Refried Black Beans

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 4 scallions, thinly sliced
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 1/8 teaspoon cayenne
  • pinch of salt and pepper
  • 2 (15 oz) cans black beans, drained
  • 1 (15 oz) can diced tomatoes, drained
Instructions:

  1. In medium saucepan, heat oil over medium heat.  Add scallions, celery, garlic, cumin, cayenne, and salt and pepper.  Cook until vegetables soften
  2. Add black beans and tomatoes, cook for 5-10 minutes.
  3. Transfer to a blender or food processor and blend until smooth or to your preference.
* If needed, add some water or reserved liquid from cans to thin beans
