Mexican Rice

Ingredients:

  • 2 cups uncooked white rice
  • 1/4 cup vegetable oil
  • 4 cups chicken broth or water
  • 1 large onion, diced
  • 1 large tomato, diced
  • 1/3 cup cilantro, chopped
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon cumin
  • 2 tablespoons tomato bouillon
  • 1 tablespoon sugar
  • 1 tablespoon brown gravy mix
Instructions:

  1. Dice onion and tomato, set aside
  2. Put rice in a bowl and add all of the spices
  3. Pour oil into a large pan and add the onion; cook until onion is tender
  4. Add uncooked rice and spices to pan and cook for 1 minute; add diced tomato and stir; add 4 cups of water, bring to boil
  5. Lower hear to simmer after a boil is reached, cover and cook for 20 minutes
  6. Add cilantro
