Mexican Rice
Ingredients:
- 2 cups uncooked white rice
- 1/4 cup vegetable oil
- 4 cups chicken broth or water
- 1 large onion, diced
- 1 large tomato, diced
- 1/3 cup cilantro, chopped
- 1 tablespoon salt
- 1 teaspoon garlic powder
- 1 tablespoon cumin
- 2 tablespoons tomato bouillon
- 1 tablespoon sugar
- 1 tablespoon brown gravy mix
Instructions:
- Dice onion and tomato, set aside
- Put rice in a bowl and add all of the spices
- Pour oil into a large pan and add the onion; cook until onion is tender
- Add uncooked rice and spices to pan and cook for 1 minute; add diced tomato and stir; add 4 cups of water, bring to boil
- Lower hear to simmer after a boil is reached, cover and cook for 20 minutes
- Add cilantro
