Chocolate Pie

Ingredients

  • 1 pie crust
  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 6 egg yolks
  • 2 1/2 cups milk
  • 4 (1 ounce squares) semisweet chocolate
  • 4 (1 ounce squares) bittersweet chocolate
  • 1 (12 ounce) container frozen whipped topping, thawed
  • Garnish: unsweetened cocoa powder, chocolate curls
Instructions

  1. Preheat oven to 425 degrees
  2. On a lightly floured surface, unroll pie curst.  Roll pastry into a 12-inch circle.  Press pie crust into a 9-inch pie plate, crimping the edges.  Prick bottom and sides of pie crust with a fork.  Bake for 12-15 minutes, or until crust is lightly browned; let cool.
  3. In a large saucepan, whisk together sugar, cornstarch, and salt.
  4. In a small bowl, whisk together egg yolks and milk.  Add to sugar mixture, whisking until smooth.  Bring to a boil over medium heat, whisking constantly.  Boil for 1 minute.  Remove from heat; stir in chocolate, whisking until chocolate is melted and mixture is smooth.  Pour into prepared pie crust.  Cover, and chill for 4 hours.  
  5. Top pie with whipped topping before serving.  Garnish with cocoa powder and chocolate curls, if desired.
