Ingredients
- 1 garlic clove, minced
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 2 pork loin chops
- 2 cups fresh or frozen blueberries
- 1/4 cup packed brown sugar
- 2 tablespoons minced fresh parsley
- 1 tablespoon balsamic vinegar
- 2 teaspoons butter
- 1 teaspoon minced fresh thyme OR 1/4 teaspoon dried thyme
- 1 teaspoon fresh sage OR 1/4 teaspoon dried sage leaves
Instructions
- Preheat oven to 350 degrees
- Combine garlic, pepper, salt and cayenne and rub into pork.
- In a large ovenproof skillet coated with cooking spray, brown the pork on both sides. Bake in oven, uncovered, for 10-15 minutes or until an instant thermometer reads 140 degrees. Remove from oven, remove pork from pan and keep warm.
- Add brown sugar and vinegar to the pan (careful not to touch the hot pan!) and cook over medium heat until the brown sugar has dissolved. Add remaining ingredients and cook until thickened, about 8 minutes. Serve sauce over pork.
